You can’t go wrong with granola, especially healthy and homemade granola. This recipe is perfect to make in bulk so you’ll have plenty on hand for quick-and-easy breakfasts throughout the week. Pour on almond milk and enjoy a crispy and crunchy cereal, or add a scoop to a reusable container and take it with you for a nutritious and filling on-the-go snack. It’s delicious as is, straight from the jar! For a vegan version, simply replace raw honey with agave.
Ingredients
2 cups rolled oats
1/3 cup dried cranberries
1/4 cup raw sunflower seeds
1/2 cup almonds, crushed
3 tbsp. raw honey
2 tbsp. coconut oil
1/2 tsp. almond extract
1 tbsp. ground cinnamon
1/8 tsp. nutmeg
Pinch of sea salt
Directions
1. Preheat oven to 325 degrees F.
2. In a large mixing bowl, combine oats, cranberries, nuts, seeds and seasonings. In a separate bowl, combine coconut oil, almond extract and honey and stir well
3, Combine the oil mixture with the oats mixture; mix ingredients thoroughly.
4. Spread mixture onto a cookie sheet and bake for 30 minutes. The granola should come out lightly toasted.
