Dark Chocolate Truffles with Hemp Protein
Makes 10 truffles
Ingredients
¼ cup hemp protein powder
¼ cup milk (or non-dairy milk alternative for vegan version)
¼ cup chopped medjool dates (about 7 dates)
2 Tbsp. rolled oats
2 Tbsp. maple syrup
2 Tbsp. coconut oil
1 Tbsp. coconut flour
2/3 cup dark chocolate chips
Directions
- Line a small plate with waxed paper. Set aside.
- In a food processor, combine protein powder, milk, dates, oats, maple syrup and coconut flour. Process until smooth. Your mixture should become smooth and pasty.
- Evenly divide mixture into 10 pieces, using about 1 Tbsp. for each. Shape into balls and set aside.
- Heat chocolate and coconut oil in a small saucepan over low-medium heat until chocolate has melted and mixture is combined. Remove from heat and let cool for 5 minutes.
- Coat each truffle with the chocolate mixture. Let any excess chocolate fall off before transferring to prepared plate.
- Place dish in freezer for about 20 minutes, until chocolate sets.
