Dark Chocolate Truffles with Hemp Protein

Makes 10 truffles

Ingredients

¼ cup hemp protein powder
¼ cup milk (or non-dairy milk alternative for vegan version)
¼ cup chopped medjool dates (about 7 dates)
2 Tbsp. rolled oats
2 Tbsp. maple syrup
2 Tbsp. coconut oil
1 Tbsp. coconut flour
2/3 cup dark chocolate chips

Directions

  1. Line a small plate with waxed paper. Set aside.
  2. In a food processor, combine protein powder, milk, dates, oats, maple syrup and coconut flour. Process until smooth. Your mixture should become smooth and pasty.
  3. Evenly divide mixture into 10 pieces, using about 1 Tbsp. for each. Shape into balls and set aside.
  4. Heat chocolate and coconut oil in a small saucepan over low-medium heat until chocolate has melted and mixture is combined. Remove from heat and let cool for 5 minutes.
  5. Coat each truffle with the chocolate mixture. Let any excess chocolate fall off before transferring to prepared plate.
  6. Place dish in freezer for about 20 minutes, until chocolate sets.
