Dairy-Free Vanilla Coconut Beverage
Ingredients
4 Medjool dates or 8 Deglet dates, pitted
1-½ cups unsweetened shredded coconut
1 whole vanilla bean or ½ tsp. vanilla extract
4 cups hot (not boiling) water
Directions
- In a high speed blender, combine hot water and coconut for 20-30 seconds or until thoroughly combined.
- Using a nut milk bag, strain the coconut mixture into a large bowl. Discard the pulp (or save it for another recipe). Pour the liquid back into the blender.
- With a paring knife, cut the vanilla bean down the middle. Scrape out the vanilla beans and add them to the blender.
- Add dates to the blender and process on high for one minute, until dates are thoroughly blended.
- Store the milk in the refrigerator for up to 5 days.
