Vanilla Coconut Milk Recipe

Dairy-Free Vanilla Coconut Beverage

Ingredients

4 Medjool dates or 8 Deglet dates, pitted
1-½ cups unsweetened shredded coconut
1 whole vanilla bean or ½ tsp. vanilla extract
4 cups hot (not boiling) water

Directions

  1. In a high speed blender, combine hot water and coconut for 20-30 seconds or until thoroughly combined.
  2. Using a nut milk bag, strain the coconut mixture into a large bowl. Discard the pulp (or save it for another recipe). Pour the liquid back into the blender.
  3. With a paring knife, cut the vanilla bean down the middle. Scrape out the vanilla beans and add them to the blender.
  4. Add dates to the blender and process on high for one minute, until dates are thoroughly blended.
  5. Store the milk in the refrigerator for up to 5 days.
