Curious about jackfruit? The new wonder fruit has everyone intrigued. Not sure how to try it? Here’s one easy way to get it to the table, and to get the family to eat it up. Jackfruit tacos! The zesty chipotle flavor and hearty texture of the fruit will win them over, and keep them asking for more! So, whip up a batch on your next taco night–and make sure to stock up on coconut wraps!
1 large jackfruit, shredded
1-2 tsp. chipotle powder
1/4 cup green onions, chopped
1 avocado, diced
1/4 cup cilantro, chopped
6 coconut wraps, cactus tortillas or romaine leaves
- In a large skillet over medium-high heat, heat coconut oil. Add jackfruit, onions and chipotle powder. Cook until slightly crispy.
- Arrange mixture on wraps and top with avocado, fresh cilantro and salsa.
Mo’s note: If you can’t find fresh jackfruit, you may also use that kind that comes canned in water. Drain and rinse before cooking.
