Easy Pumpkin Spice Ice Cream

Sometimes, you want the best of both worlds. You want the gas mileage of a Prius with the va-va-vroom of a Lamborghini. Since that’s a bit of stretch, you’ll have to settle with this Pumpkin Ice Cream recipe. Stuck somewhere between the flavors of fall and the cool vibes of summer, this dessert is like a two-for-one deal. Get it while it’s (still kind of) hot!

Pumpkin Ice Cream Cone

2 frozen bananas
1/2 cup pumpkin puree
1/4 cup vanilla almond milk
1 tsp. pumpkin pie spice
2 packets stevia


1. In blender or food processor, puree all ingredients.

2. Transfer to air-tight container and place in freezer to harden.

3. Top with carob chips, nuts or sugar-free maple syrup and enjoy!
