In a moment of desperation and pure, stinging hunger, you dig down into the depths of your bag to pull out an expired, flat-as-a-pancake granola bar. Oh, the disappointment. If you really want to be the I-can-do-it-all rock star you know you are, there’d be an Elvis Presley Protein Bar stashed in that tote. This homemade chocolate-banana snack will move you like the King himself. You’re welcome, you’re welcome very much.

Homemade Banana & Peanut Butter Protein Bars

Elvis Presley Protein Bars

Ingredients

2 Tbsp. Nutiva Coconut Flour
½ cup oat flour
2 scoops chocolate protein powder
2 Tbsp. ground flaxseed
1 ripe banana, sliced
1 Double Chocolate Chunk Quest Bar
2 Tbsp. natural peanut butter
2 Tbsp. dark chocolate coconut butter

Directions

  1. Line a loaf pan with parchment paper.
  2. In a large mixing bowl, combine all dry ingredients. Add banana slices and stir until combined.
  3. Microwave Quest bar for 15 seconds, and then mash melted bar into the mixture.
  4. Stir in peanut butter and coconut butter, continue to mash and mix until thoroughly combined.
  5. Scoop mixture into prepared loaf pan, spreading out evenly. Place in freezer for 30 minutes to set and harden.
  6. Cut into bars and enjoy!
