Recipes always say they’re super easy, don’t they? Then 25 minutes in, your kitchen looks like a war zone and you realize you’re fresh out of thyme leaves (because who really has the “thyme” to grow and gather their own herbs?) Well, we can say with certainty that this recipe is actually easy.
Just a bit of chopping and sprinkling””and setting the oven time””and you’re done! You’ll get lots of compliments at the dinner table and you will find yourself blushing and saying, “It was nothing, really.”

You’ll need:
“¢ 4 boneless chicken breast halves
“¢ 1 cup crumbled feta or goat cheese
“¢ 1 small-to-medium red bell pepper, finely chopped
“¢ 2 tbsp lemon juice
“¢ Dried herbs (parsley, basil)
“¢ Sea salt and pepper
Preheat oven to 350. Place chicken on a foil-lined baking sheet. In a small bowl, mix chopped peppers and cheese. Drizzle each chicken breast with lemon juice, then use a spoon to sprinkle each piece with the cheese and pepper mixture (don’t be shy””use it all). Top with a pinch of herbs, salt and pepper. Slide into oven and bake 40-45 minutes or until juices run clear.
After dinner, toss the foil and enjoy the rare miracle of a clean kitchen.
