Take a trip down memory lane, back to a time when holiday treats were simple and homemade baked goods from friends and neighbors were the norm. This crunchy popcorn ball is a blast from the past with a modern gourmet twist. The addition of spicy crystallized ginger and tart, colorful goji berries makes them almost as pretty to display as they are a joy to eat!
Ingredients
1/3 cup organic popcorn kernels
½ cup sunflower seed butter
2 Tbsp. coconut oil
½ cup brown rice syrup
½ cup goji berries
½ cup crystalized ginger, diced into small pieces
Directions
- In large pot over medium-high heat, melt coconut oil. Add popcorn kernels and cover. Occasionally shaking pot, let popcorn pop. Transfer popcorn to a large bowl and remove any un-popped kernels.
- Sprinkle in crystalized ginger and goji berries.
- In small sauce pan over medium-low heat, combine sunflower seed butter and brown rice syrup, stirring occasionally. When pourable (about 3 minutes), pour mixture over popcorn and use spoon or your hands to completely coat popcorn.
- With slightly wet hands, form popcorn into 3″ balls. Serve right away for best flavor and texture.
