Festive Ginger & Goji Berry Popcorn Balls

Take a trip down memory lane, back to a time when holiday treats were simple and homemade baked goods from friends and neighbors were the norm. This crunchy popcorn ball is a blast from the past with a modern gourmet twist. The addition of spicy crystallized ginger and tart, colorful goji berries makes them almost as pretty to display as they are a joy to eat!

Festive Ginger and Goji Berry Popcorn Balls


1/3 cup organic popcorn kernels
½ cup sunflower seed butter
2 Tbsp. coconut oil
½ cup brown rice syrup
½ cup goji berries 
½ cup crystalized ginger, diced into small pieces


  1. In large pot over medium-high heat, melt coconut oil. Add popcorn kernels and cover. Occasionally shaking pot, let popcorn pop. Transfer popcorn to a large bowl and remove any un-popped kernels.
  2. Sprinkle in crystalized ginger and goji berries.
  3. In small sauce pan over medium-low heat, combine sunflower seed butter and brown rice syrup, stirring occasionally. When pourable (about 3 minutes), pour mixture over popcorn and use spoon or your hands to completely coat popcorn.
  4. With slightly wet hands, form popcorn into 3″ balls. Serve right away for best flavor and texture.
