Transitioning to a gluten-free diet is not without challenges. Pasta, crackers, cereal and many other once-loved favorites are suddenly forbidden. One of the biggest struggles is making do (or dough) without bread, so we challenged ourselves to find a simple and fun gluten-free alternative. Enter oatmeal, garbanzo and fava bean waffles! Whether you’re noshing on avocado toast or peanut butter and banana sandwiches, these delightful waffles have your back. They’re quick and easy to make, plus they’re packed with whole grains and fiber. Challenge completed.

Garbanzo-Oatmeal Waffles

Ingredients

1/3 cup oatmeal
¼ cup garbanzo and fava flour
1 Tbsp. flaxseed meal
¼ tsp. salt
¼ tsp. baking powder
½ cup + 3 Tbsp. hot water, divided

Directions

  1. In a small bowl, combine flaxseed meal and three tablespoons of water. Set aside for a few minutes to thicken.
  2. In a large bowl, combine all ingredients (including flax mixture) and mix until combined..
  3. Transfer mixture to a waffle iron and cook.
