Garlicky Black Bean Pasta with Deviled Eyes for Halloween

If you want to scare your little monsters into eating something other than candy on Halloween, try this frightening recipe and you’ll SEE how much they will love it! All it takes is a little creativity and some spooky inspiration to make this tasty meal.

Ingredients

“Deviled eyeballs”

Hard boiled eggs
Blue food coloring and red food coloring
Jumbo black olives
Garlic mayonnaise
Unflavored gelatin glaze

Black bean spaghetti

1 box Explore Cuisine black bean spaghetti, cooked & drained
2 Tbsp. olive oil
2 garlic cloves, minced
1 Tbsp. cooked egg yolk, grated (use remains from eyeball recipe)
1 Tbsp. fresh herbs such as tarragon, parsley and/or chives, finely chopped
Salt, to taste
Red chili flakes, to taste

Special equipment
1 large sharp, thin tube (to make the iris)
2 small sharp, thin tube (to make the pupil)
Fine paintbrush
Pastry brush

Directions

1. To make eyes, first form the iris by using the larger tube to cut top of hardboiled egg in a circle. Remove the egg white plug. Paint egg white plug with diluted food coloring to look like an iris. Let dry.

2. To form pupil, use smaller tube to cut out a place for the pupil in the painted iris. Use the same tube to cut a pupil out of the black olive. Place the olive pupil into the iris.

3. Cut off the bottom third of the egg so it will nestle in the spaghetti spoon. Reserve any hard-boiled egg yolks for spaghetti recipe.

4. Scoop out small amount of egg yolk from top of egg to make room for mayonnaise. Squirt garlic mayonnaise into the hollow top of hard-boiled egg, then replace iris plug.

5. For “bloodshot eyes”, use food coloring to paint thin lines around the iris. Let dry.

6. Finish by brushing a light coat of slightly thickened gelatin glaze over the entire eye to give an authentic glossy finish. Set aside.

7. In medium bowl, combine olive oil, garlic, herbs, salt and chili flakes. Add spaghetti and toss. Sprinkle with grated egg yolk.

8. Arrange spaghetti in decorative serving spoons and place deviled eyes in center for the spookiest suppertime you’re family has ever seen!
