The warm, spicy aroma of gingerbread batter cooking in coconut oil on the skillet may actually lure your children away from the tree and into the kitchen so they can eat up and then go back to playing with all of their new loot.
Bonus kid activity: use gingerbread man cookie cutters to turn pancakes into gingerbread men, then use fruit and sweets to decorate!
Gingerbread Man Pancakes
Ingredients
Serves 10
1-½ cups gluten-free flour
1 tsp. baking powder
¼ tsp. baking soda
¼ tsp. sea salt
½ tsp. ground ginger
¼ tsp. ground nutmeg
¼ tsp. ground cloves
1 tsp. cinnamon
1 egg, beaten
1 tsp. of pure vanilla extract
¼ cup molasses
1- ½ cups of unsweetened vanilla or plain almond milk
3 Tbsp. extra-virgin coconut oil
Directions
- In large bowl, combine dry ingredients and spices; set aside. In a separate bowl, combine the almond milk, egg, molasses and vanilla. Pour wet ingredients into dry-ingredients bowl and stir until combined.
- In griddle over medium heat, warm coconut oil, then drop spoonfuls of batter to create pancakes. When bubbles form and edges are set, flip and brown on the other side.
- Use cookie cutters to make gingerbread pancake men; decorate with raisins or chocolate chips for eyes and sliced berries for a mouth.
