Easy Red Lentils

Red Lentil Recipe
Packed with protein and fiber, red lentils make a great addition to any meal. Buy a bag at Vitacost.com today!

Heat olive oil in medium sized saucepan. Add the onions and garlic and cook over high heat until they begin to brown.

Reduce heat to medium high and add the water, tomatoes, and lentils. Bring to a boil. Once boiling, lower heat. Add in the spices. Cover the pot with a lid and simmer until the lentils are tender, about 30 minutes, stirring occasionally.

Serve hot over rice or quinoa.
