Good-and-Thin Mint Cookies

You hate stealing the show from an adorable, sash-adorning little girl. But you can easily make your own version of finger-licking-good mint chocolate cookies. Though inspired by the green-boxed goodies, this recipe features only ingredients you know and can pronounce (even with your mouth full). Plus, these rebel treats are gluten free and can easily be made vegan with one simple swap.

Good-and-Thin Mint Cookies

Cookie

2 Tbsp. Nutiva Coconut Flour
½ cup almond flour
2 Tbsp. cornstarch
2 Tbsp. cocoa powder
2 Tbsp. coconut sugar
¼ cup honey (or agave for vegan version)
1 tsp. vanilla

Mint chocolate coating

½ cup dark chocolate chips
1 Tbsp. coconut oil
3-4 drops peppermint flavor
1 tsp. stevia

Directions

  1. Preheat oven to 325 degrees F and line a cookie sheet with parchment paper.
  2. In a medium bowl, combine all dry cookie ingredients and stir until thoroughly mixed.
  3. Add honey and vanilla, stirring until combined.
  4. Using a spoon or your hands, scoop dough and roll into balls. Place on prepared cookie sheet. Press each ball flat into a cookie shape.
  5. Once all dough is rolled and pressed, bake 14-17 minutes. Let cool to crisp up.
  6. In a small bowl, combine all mint chocolate coating ingredients. Microwave about 20 seconds, stirring until fully melted and all ingredients incorporated.
  7. Dip cooled cookies into mint chocolate, or use a spoon to pour melted mint chocolate over each cookie. Make sure to fully coat each cookie. Place in the freezer until firm. Enjoy!
