Grilled Hemp-fu Zoodles

Your taste buds—and your waistline—are in for a treat. Rather than traditional, high-carbohydrate pasta, spiralized zucchini is the base of this good-for-you noodle dish. The green strands are tossed with sesame oil and green onions and served with grilled hemp tofu and dried shiitake mushrooms for a meal that’s heavy on flavor, but light on your stomach.

Grilled Hemp-fu Zoodles

Ingredients

2 cups zucchini ribbon “noodles”
¼ cup sesame oil (or less, if desired)
¼ cup green onions, chopped
1 package hemp-fu (hemp tofu), crumbled or sliced
Dried or fresh shiitake mushrooms, sliced
Coconut aminos
Gomasio
Freshly ground black pepper
Coconut oil, for sautéing

Directions

  1. Use a spiralizer or peeler to make zucchini noodles.
  2. In a big bowl, combine noodles with 3 teaspoons of sesame oil and green oinions. Set aside.
  3. In a skillet over medium heat, heat coconut oil. Add hemp-fu, mushrooms, Gomasio, coconut aminos and black pepper. Cook until hemp-fu and mushrooms are browned and seasoned.
  4. Transfer hemp-fu mixture to the bowl of zucchini noodles and mix. Add sesame oil, aminos and gomasio to taste.

Note: Be conservative when adding the sesame oil. It’s very rich, so start sparingly and add accordingly.
