All hail kale! Your regular Caesar salad needs an upgrade, so swap the romaine for nutrient-rich kale. Give it a flavorful boost by throwing it on the grill instead of eating it raw. And, instead of tossing the greens in foul-smelling fishy and eggy dressing, you’ll massage the pre-grilled leaves with a zesty vegan mixture of olive oil, nutritional yeast and fresh lemon juice. Dig in!
Ingredients
2 large bunches of organic dinosaur kale, torn into large pieces
3 Tbsp. extra virgin olive oil
2 Tbsp. nutritional yeast
Juice of 1/2 lemon
Freshly ground black pepper, to taste
Pinch sea salt, to taste
Directions
- In small bowl or jar, combine oil, nutritional yeast, lemon, pepper and salt until thoroughly combined.
- Gently and generously massage dressing into kale, careful not to break leaves into small pieces that will fall through grill.
- Grill until you reach desired texture.
- Serve immediately.
