Grilled Parmesan Basil Corn

Fresh sweet corn is brushed with a flavorful butter-herb spread before grilling, then sprinkled with a unique Parmesan-flax mix, in this delicious and healthy recipe from culinary nutritionist and recipe developer, Amie Valpone.

Grilled Parmesan Basil Corn

Gluten Free and Vegetarian

Serves 12

Ingredients

1-1/4 cups fresh basil, finely chopped
1/2 cup butter, room temperature
1 Tbsp. chili powder
2 tsp. fresh lemon juice
1/2 tsp. sea salt
1/4 tsp. freshly ground pepper
12 ears corn, husked
Freshly grated Parmesan cheese
2 Tbsp. ground flax seeds

Instructions

1. Heat grill to medium-high.

2. In a food processor, puree basil, butter, chili powder, lemon juice, sea salt and pepper.

3. Brush corn with basil butter mixture. Grill corn, turning occasionally, approximately 7 to 8 minutes. Remove from heat, brush each ear of corn with remaining butter mixture; sprinkle with parmesan cheese and flax seeds.
