Grilled Peaches with Vanilla Cashew Cream & Mint

Ingredients

  • 3 ripe peaches cut in half
  • Fresh mint can use basil

Vanilla Cashew Cream

Instructions

  1. Drain and rinse soaked cashews. In high-speed blender or food processor, combine all cashew cream ingredients and process to smooth. Transfer to airtight contain and refrigerate until ready to use.
  2. Over open flame or grill, grill peaches until lightly glazed.
  3. To serve, drizzle cream over peach halves and garnish with fresh mint.
