Salad dressings can get a bad rap. Often ordered “on the side” by salad lovers and clean eaters, many oils, creams and vinaigrettes are loaded with fat and calories, plus preservatives and other ingredients that are heavy on the stomach. Rather than eating a bland, dry plate of greens, try this flavorful combination of oil, vinegar, herbs and Dijon mustard for a light, silky topping that you’ll want to douse all over your entire plate.
