Layered Protein Breakfast Bars

I like to keep things simple. No muss, no fuss. Just simple, pure and straight-forward. This matters most when it comes to preparing food. Many recipes contain hard-to-find ingredients that you’ll likely only use once. These obscure items steal valuable space in your cupboard until the expiration date creeps up, forcing you to dump them straight into the trash. Luckily, this is not that kind of recipe! These protein bars are made with basic ingredients that most healthy foodies (like me!) have readily available in their kitchens. Clean, pure and simple, these bars are a great start to a health-ful day.

Chocolate-Oat Protein Bars

Layered Protein Breakfast Bars

Makes 4-6 bars

Ingredients

Oat Layer

½ cup old fashioned rolled oats
¼ cup oat flour (ground oats in blender or food processor)
¼ cup whey protein powder (I used peanut butter, but you can use whatever flavor you have)
¼ cup ground flax seed
¼ cup + 1 Tbsp. almond butter (use other nut butter of choice)
2 Tbsp. organic honey, agave or maple syrup
1 Tbsp. water

Chocolate Layer

1 Tbsp. coconut oil, melted
1 Tbsp. organic honey, agave or maple syrup
1-½ Tbsp. cocoa powder
Cacao nibs, for topping (optional)

Directions

  1. Line a small loaf pan with parchment paper.
  2. In a large bowl, mix all oat layer ingredients until well combined. Pour dough into prepared pan. Press down and flatten the top. Set aside.
  3. In a medium bowl, combine melted coconut and honey and add cocoa powder. Pour chocolate mixture over oat layer and spread it evenly to cover. Top with cacao nibs, if desired.
  4. Place pan in the freezer for an hour, until bars have hardened.
