Mini Sweetheart Chocolate Cakes
Cake
¼ cup Nutiva Coconut Flour
¼ cup chocolate protein powder
¼ cup cocoa powder
¼ cup unsweetened shredded coconut
1 Tbsp. melted coconut oil
¼ cup honey
2 tsp. stevia
1 tsp. vanilla
½ tsp. baking powder
½ tsp. baking soda
Ganache
½ cup cocoa powder
¼ cup honey
¼ cup coconut oil
Directions
- Preheat oven to 375 degrees F and coat an 8” x 8” cake pan with non-stick cooking spray.
- In a blender, combine all ingredients and pulse until smooth.
- Pour mixture into prepared pan and bake 12-14 minutes.
- Once cooled, use a heart-shaped cookie cutter to make 4 heart cakes.
- To make the ganache, add all ingredients to a small bowl and stir until well combined. Spoon and spread over top each cake. Sprinkle with candy hearts or sprinkles, if desired, and enjoy!
