We all know spinach helped make Popeye biff ’em, buff ’em and always out rough ’em. And as a healthy foodie yourself, you work the leafy green into your own daily diet. A delicious lunch these days might include a spinach salad topped with dried cranberries and almonds. And the green smoothie you can’t stopping slurping? It’s made with a handful (or two)! At long last, you can add ice cream to your list of favorite spinach-containing foods. Minty Green Protein Ice Cream

Makes 4 small servings

Ingredients

2 scoops Manitoba Hemp Pro 70 Protein Powder
1/3 cup spinach, frozen
2 Tbsp. Nutiva Coconut Manna
¼ tsp. mint extract or fresh mint leaves
½ – ¾ cup unsweetened vanilla coconut milk
1-2 Tbsp. cacao nibs
Ice, to preferred texture
Pinch of pure stevia, optional, if desired

Directions

  1. In a high-speed blender, combine all ingredients.
  2. Process until smooth.

Tip: For thicker ice-cream consistency, use full-fat coconut cream instead of coconut milk.
