At long last, you can add ice cream to your list of favorite spinach-containing foods. With refreshing mint and coconut flavors, this ice cream will delight your taste buds while keeping you strong to the finish, like our favorite sailor man.
Minty Green Protein Ice Cream
Makes 4 small servings
Ingredients
2 scoops Manitoba Hemp Pro 70 Protein Powder
1/3 cup spinach, frozen
2 Tbsp. Nutiva Coconut Manna
¼ tsp. mint extract or fresh mint leaves
½ – ¾ cup unsweetened vanilla coconut milk
1-2 Tbsp. cacao nibs
Ice, to preferred texture
Pinch of pure stevia, optional, if desired
Directions
- In a high-speed blender, combine all ingredients.
- Process until smooth.
Tip: For thicker ice-cream consistency, use full-fat coconut cream instead of coconut milk.
