Mocha Chia Pudding

It’s 3 o’clock in the afternoon and your stomach is starting to rumble. You see a coworker nearby fumbling with a crumbly, flat, stale-looking protein bar he undoubtedly dug out from the bottom of his gym bag. Lucky for you, you won’t suffer the same fate because you’ve got a delicious mocha chia pudding to get you through the afternoon. Quick and easy, you can whip up this snack in less than 10 minutes. Need a morning pick-me-up? Make this pudding as an on-the-go breakfast!

Chocolate Chia Pudding with Strawberries & Almonds |


1 cup full-fat coconut milk
2 Tbsp. instant coffee or instant espresso
2 Tbsp. Navitas chia seeds
1 Tbsp. vanilla
2 tsp. cinnamon
1/4 cup unsweetened cocoa powder


  1. In medium bowl, soak chia seeds in milk for several minutes to thicken. Stir in coffee, vanilla and cocoa powder.
  2. Place pudding in fridge so it continues to thicken.
  3. To serve, sprinkle with cinnamon. If desired, top with fruit or nuts.
