- In medium bowl, soak chia seeds in milk for several minutes to thicken. Stir in coffee, vanilla and cocoa powder.
- Place pudding in fridge so it continues to thicken.
- To serve, sprinkle with cinnamon. If desired, top with fruit or nuts.
