Jam, jelly, nut butter, fruit, avocado—when it comes to toppings for toast, the options are virtually endless. Want to get your rye to rise to the next level? Mash a healthy foodie’s favorite topping, avocado, with zucchini and cabbage, and top it off with hemp seeds, fresh herbs and seasonings. In the end, you’ll have a delicious spread for a toasty breakfast, lunch or snack.

Mo’s Avocado Smash

Ingredients

Essential Baking Co. seeded bread or Julian’s Bakery Paleo Wrap
1 avocado
½ cup organic zucchini, shredded
2 Tbsp. red cabbage, shredded
2 Tbsp. hemp seeds, toasted
1 Tbsp. fresh parsley, diced
2 tsp. apple cider vinegar
2 tsp. coconut aminos
Freshly ground black pepper, to taste
Cayenne pepper OR fresh jalapeño pepper, sliced, optional

Directions

  1. Warm or toast bread or wrap.
  2. In a bowl, combine all ingredients, except for the bread, and mash until you reached desired level of consistency.
  3. Spread mixture onto an open-faced toast or wrap.
  4. Store leftovers in the fridge in an airtight, glass container.
