Mo’s Spicy Carrot Salad Dressing
Ingredients
2 medium carrots
1-½ tsp. chill pepper flakes
¼ cup extra virgin olive oil
Juice of small lemon
2 Tbsp. green onions, diced
Pinch of sea salt, optional
Directions
- In a food processor or high-speed blender, shred carrots.
- In a covered jar, combine all ingredients. Shake (or blend, if necessary) into a creamy dressing.
- Serve as a salad dressing, marinade or sauce for dipping.
