Mo’s Spicy Carrot Salad Dressing

Store-bought bottles are so tempting—they’re tasty and their convenience is almost unmatched. (Almost.) But in a few short minutes—just in the time it takes your blender to shred carrots—you can whip up a zesty topping that’s more delicious and likely even better for you, too! Those handy bottled dressings have finally met their match.

Mo’s Spicy Carrot Salad Dressing


2 medium carrots
1-½ tsp. chill pepper flakes
¼ cup extra virgin olive oil
Juice of small lemon
2 Tbsp. green onions, diced
Pinch of sea salt, optional


  1. In a food processor or high-speed blender, shred carrots.
  2. In a covered jar, combine all ingredients. Shake (or blend, if necessary) into a creamy dressing.
  3. Serve as a salad dressing, marinade or sauce for dipping.
