One person in your household loves pancakes for breakfast. Another wants muffins. Satisfy both hungry parties by making these light, fluffy popovers—they’re the best of both worlds! Made in a muffin pan with wholesome and irresistible pancake mix, these easy, portable puffs are a treat to add to any breakfast spread. Enjoy them powdered with sugar, slathered with jam or nut butter or dipped into gravy.

Muffin Pan Popovers

Makes 6 servings

Ingredients

1 cup Bob’s Red Mill 10-Grain Pancake Mix
4 eggs
1 cup milk
¼ cup butter, melted

Directions

  1. Preheat oven to 450 degrees F. While it’s heating, place a standard muffin pan on the center oven rack.
  2. In a bowl, whisk eggs and milk together. Once combined, mix in pancake mix. Cover bowl and set aside for 30 minutes.
  3. After 30 minutes, remove pan from oven. In six muffin cups, pour in 2 teaspoons of melted butter. Add about ½ cup of batter into each of the six cups, filling them up to the top.
  4. Bake for 10 minutes. Then, reduce heat to 375 degrees F and bake for an additional 20 -25 minutes.
