One person in your household loves pancakes for breakfast. Another wants muffins. Satisfy both hungry parties by making these light, fluffy popovers—they’re the best of both worlds! Made in a muffin pan with wholesome and irresistible pancake mix, these easy, portable puffs are a treat to add to any breakfast spread. Enjoy them powdered with sugar, slathered with jam or nut butter or dipped into gravy.
Muffin Pan Popovers
Makes 6 servings
Ingredients
1 cup Bob’s Red Mill 10-Grain Pancake Mix
4 eggs
1 cup milk
¼ cup butter, melted
Directions
- Preheat oven to 450 degrees F. While it’s heating, place a standard muffin pan on the center oven rack.
- In a bowl, whisk eggs and milk together. Once combined, mix in pancake mix. Cover bowl and set aside for 30 minutes.
- After 30 minutes, remove pan from oven. In six muffin cups, pour in 2 teaspoons of melted butter. Add about ½ cup of batter into each of the six cups, filling them up to the top.
- Bake for 10 minutes. Then, reduce heat to 375 degrees F and bake for an additional 20 -25 minutes.
