You have a craving for a pumpkin treat. You could a) hit up the coffee shop and get a sugary squirt of flavoring added to your drink, b) spend 30 minutes making and baking a pie — and destroying your kitchen in the process or c) roll together these no-bake, mini pumpkin-coconut balls and nip that craving right in the pumpkin-loving bud.
OK, there are other options. But once you try these bite-size treats, packed with both real pumpkin puree and satisfying pumpkin seed butter, there’s just no turning back.
Pumpkin Seed Butter Balls
Ingredients
½ cup pumpkin seed butter
1-2 Tbsp cashew butter
½ cup pure pumpkin
2 tablespoons vanilla
¼ cup ground flax seeds
1 Tbsp chia seeds soaked in 3 tablespoons of water
1 cup shredded coconut, unsweetened (set aside 1/3 cup for rolling)
2-3 teaspoons ground cinnamon
¼ teaspoon ground nutmeg
Optional: pinch of pure stevia if you need the extra sweetness
Directions
1. Mix together all ingredients, saving some shredded coconut for topping.
2. Shape into mini balls; roll through remaining coconut.
3. Enjoy immediately, refrigerate up to 10 days or freeze in airtight container or freezer bag up to 5 weeks.
