You won’t regret feeding your family this perfectly textured tasty oatmeal casserole. This dish calls for rolled oats and fresh and dried fruits such as cranberries and blueberries. But the best part is that you can toss in any fruit you like! Try peaches or mango for an extra pop of flavor you’ll love just as much! Eat it plain or sprinkle on some unsweetened shredded coconut or chia seeds for extra nutrition.

Ingredients
3 cups old-fashioned rolled oats (not instant)
2-1/2 pints fresh blueberries
2 large organic brown eggs or egg replacer
1 large apple, peeled, cored & diced
1 cup shredded coconut
1 cup Simple Truth Unsweetened Almondmilk, plus more for topping
1/2 cup Vitacost Organic Raisins
1/2 cup dried cranberries
1/2 cup vegetable oil
1/2 cup Simple Truth Organic Sugar
2 tsp. baking powder
1/2 tsp. Vitacost Organic Cinnamon
1/2 tsp. coarse salt
Cooking spray
Directions
- Preheat oven to 350 degrees F. In bowl, mix oil, sugar and eggs until combined. Mix in oats, baking powder, salt, cinnamon and milk. Add fruit.
- Coat baking dish with cooking spray, then pour oat mixture into dish. Bake for 30 minutes.
- Distribute into bowls, sprinkle on shredded coconut, pour a splash of milk on top and serve warm.
Additional cooking tip: You can also prep this dish the night before and place in the refrigerator (covered) and bake in the morning.
