Organic Bone Broth Soup de Provence

If you’re not familiar with the benefits of bone broth, many people attribute a host of health benefits to the liquid as it contains naturally occurring protein and nutrients such as gelatin, collagen and amino acids. This wholesome, yet light bone broth soup recipe features cumin and herbes de Provence for a warm, satisfying meal. Slurp it up as is, or use it as a base for heartier soups like French onion.

Ingredients
8 cups chicken bone broth
4 Tbsp. Simply Organic® herbes de Provence
2 Tbsp. extra-virgin olive oil
1 Tbsp. Simply Organic® ground cumin
2 stalks celery, chopped
2 cloves garlic, minced
1 small onion or 2 to 3 scallions, sliced
1/2 tsp. tamari
Pinch Simply Organic® lemon pepper

Directions
1. In medium soup pot, heat olive oil and cumin over medium heat. Add celery, garlic and onion, then sauté about 5 minutes, until vegetables are crisp-tender. Add broth.
2. In mesh bag or tea ball, place herbes de Provence, then place bag or ball in soup and add tamari.
3. Cover and simmer for 20 minutes, stirring occasionally.
4. Season with lemon pepper to taste.
