Makes 8 pancakes
Ingredients
2 eggs
2 Tbsp. water or nut milk
4 tsp. olive oil
1 cup Simple Mills Gluten-Free Pancake Mix
Maple syrup
Berries (optional)
Hemp seeds (optional)
Directions
- In mixing bowl, whisk together water or nut milk and oil. Add pancake mix and whisk until thoroughly combined.
- Heat lightly-oiled pan over medium heat. Add about two tablespoons batter for each pancake. Once bubbles appear, after 1-2 minutes, flip pancake and cook another 1-2 minutes. Transfer to plate. Repeat with remaining batter.
- When ready, use heart-shaped cookie cutter or knife to make heart-shaped pancakes. To serve, drizzle with maple syrup and top with berries and hemp seeds.
