Peanut-Banana & Coffee Overnight Oats

Serves 1

Ingredients
1/3 cup oats
¼ cup brewed coffee
½ banana, mashed
1 Tbsp. peanut flour
¼ cup unsweetened almond milk
½ Tbsp. chia seeds
½ tsp. vanilla extract
Optional: stevia (to taste); sliced bananas

Directions

  1. Combine all ingredients in jar or lidded container, layering with sliced bananas.
  2. Refrigerate overnight. Enjoy cold for breakfast!
