Peanut Butter-Chocolate Chip Energy Bars

Energy bars are perfect for an on-the-go breakfast or a quick pick-me-up before working out. Though tasty and convenient, traditional bars are often full of sugar and unhealthy additives. Don’t sacrifice your health for the ease of eating on the run and try making your own! These easy, no-bake Chocolate Chip-Peanut Butter Energy Bars are delicious and packed with nutritional goodness. They taste better and are more economical than the store-bought kind!

Chocolate Peanut Butter Energy Bars

Peanut Butter-Chocolate Chip Energy Bar

Ingredients

2-½ cups old fashioned rolled oats
½ cup brown rice crisps
½ cup peanut butter
½ cup semi-sweet mini chocolate chips
½ cup brown rice syrup
¼ cup whole flaxseeds
¼ cup unsalted sunflower seeds
1/3 cup chocolate whey protein isolate
2 Tbsp. honey
2 Tbsp. lecithin powder
1 tsp. Himalayan pink salt

Directions

  1. Line a 13×9 glass baking pan with parchment paper.
  2. In a large mixing bowl, combine dry ingredients. Add wet ingredients and gently mix until fully combined.
  3. Pour mix into the lined dish. Using the back of a spoon, press down and flatten mixture.
  4. Refrigerate for two hours, or until firm.
  5. Cut into 14 bars. Store leftover bars in freezer.
