Peanut Butter, Strawberry & Banana French Toast Roll-Ups

Makes: 6

Ingredients

5-6 large strawberries, finely chopped
6 slices whole wheat bread
1 large banana, sliced
1 large egg or flax egg
1/4 cup peanut butter
1/4 cup almond milk
2 Tbsp. granulated white sugar
1 Tbsp. salted butter or dairy-free butter alternative
1/2 tsp. vanilla extract
1/2 tsp. cinnamon
Powdered sugar, to garnish

Directions

  1. In bowl, whisk milk, egg and vanilla to prepare custard and set aside. On plate, mix sugar and cinnamon and set aside.
  2. On cutting board, trim edges off bread slices. Using a rolling pin, roll over bread slices until thin.
  3. Spread peanut butter on each slice and layer banana and strawberries on one end of each slice.
  4. In a pan, heat butter over medium heat and start rolling each slice starting from end with fruit. Repeat with remaining slices.
  5. Take each roll-up and dip it into custard mix. Shake off excess, place on pan and cook until both sides turn golden brown.
  6. Remove roll-ups from pan and roll into cinnamon-sugar mixture.
  7. Dust with powdered sugar and serve immediately.
