Peanut Butter, Strawberry & Banana French Toast Roll-Ups

Ingredients
5-6 large strawberries, finely chopped
6 slices whole wheat bread
1 large banana, sliced
1 large egg or flax egg
1/4 cup peanut butter
1/4 cup almond milk
2 Tbsp. granulated white sugar
1 Tbsp. salted butter or dairy-free butter alternative
1/2 tsp. vanilla extract
1/2 tsp. cinnamon
Powdered sugar, to garnish
Directions
- In bowl, whisk milk, egg and vanilla to prepare custard and set aside. On plate, mix sugar and cinnamon and set aside.
- On cutting board, trim edges off bread slices. Using a rolling pin, roll over bread slices until thin.
- Spread peanut butter on each slice and layer banana and strawberries on one end of each slice.
- In a pan, heat butter over medium heat and start rolling each slice starting from end with fruit. Repeat with remaining slices.
- Take each roll-up and dip it into custard mix. Shake off excess, place on pan and cook until both sides turn golden brown.
- Remove roll-ups from pan and roll into cinnamon-sugar mixture.
- Dust with powdered sugar and serve immediately.
