Peanut Butter Swirl Brownies
Makes 16 servings
Ingredients
Brownies
21 oz. package gluten-free brownie mix
¾ cup warm water
¾ cup butter, melted
1 egg
Peanut Butter Frosting
½ cup powdered sugar
¾ cup creamy peanut butter
¼ cup salted roasted peanuts, chopped
½ tsp. vanilla extract
¼ cup butter, melted
¼ tsp. salt, optional (use if using unsalted peanut butter)
Directions
- Preheat oven to 350 degrees F. With non-stick spray, coat a 13×9” baking pan.
- In a large bowl, combine brownie mix with water, butter and egg. With an electric mixer, beat batter until combined. Pour batter evenly into prepared pan, smoothing out the top.
- In a separate bowl, combine all ingredients for peanut butter swirl, gently folding in the peanuts last.
- Put heaping scoops of the peanut butter frosting along the top of the brownies. Use a butter knife to run and swirl the peanut butter into the brownies.
- Bake for 25 minutes, until a toothpick comes out clean.
