Protein-Packed Chocolate Mint Thins

Servings 8

Ingredients

Coconut Cream Topping

  • 3-2/5 oz. coconut milk
  • 1 tsp. sugar-free vanilla Jell-O mix
  • 1 tsp. vanilla extract

Instructions

  1. In bowl, mix together protein powder, cacao powder, vanilla extract, peanut butter, coconut oil and sugar-free chocolate. Add water 1/2 cup at a time until creamy texture is achieved.
  2. In separate bowl, mix together all coconut cream ingredients.
  3. In glass dish, pour chocolate mixture, followed by coconut layer.
  4. Freeze until firm, then cut into bars.
