Protein-Packed Chocolate Mint Thins

Ingredients
- 3/4 cup Optimum Nutrition Gold Standard 100% Plant Unflavored Protein Powder
- 3 Tbsp. cacao powder
- 2 tsp. vanilla extract
- 4 Tbsp. stevia
- 1-1/2 tsp. peppermint extract
- 5 Tbsp. light peanut butter
- 2 Tbsp. coconut oil melted
- 2 Tbsp. sugar-free chocolate melted
- 3 cups water
Coconut Cream Topping
- 3-2/5 oz. coconut milk
- 1 tsp. sugar-free vanilla Jell-O mix
- 1 tsp. vanilla extract
Instructions

In bowl, mix together protein powder, cacao powder, vanilla extract, peanut butter, coconut oil and sugar-free chocolate. Add water 1/2 cup at a time until creamy texture is achieved.

In separate bowl, mix together all coconut cream ingredients.

In glass dish, pour chocolate mixture, followed by coconut layer.
