Ingredients
- 1-1/2 cups sweet rice flour
- 1/2 cup cane sugar
- 1 tsp. baking powder
- 1/2 cup pumpkin puree
- 2/3 cup coconut milk
- 1/4 cup sweetened condensed milk
- 1 tsp. pumpkin pie spice
- 1 tsp. vanilla extract
- 3 tbsp melted butter
- 2 large eggs
Instructions

Preheat oven to 350 degrees F. Grease baking dish or line it with parchment paper.

In large mixing bowl, whisk together pumpkin puree, cane sugar, coconut milk, sweetened condensed milk, melted butter, vanilla extract and eggs until smooth.
