This simple recipe combines the best seasonal flavors with two of your favorite year-round foods. Yogurt and granola are a dynamic duo when it comes to breakfast, lunch, snack time and even dessert! Both come in a variety of flavors and are available pretty much anywhere. But this time of year, the classic yogurt-and-granola combo warms up with the rest of us! Just add pumpkin, cinnamon and nutmeg for an elegant layered treat that may even win you over pumpkin pie completely!
Pumpkin Spice Yogurt Parfait with Granola
Ingredients
2 15 oz. cans pumpkin purée
38 oz. vanilla yogurt
1-1/2 cups granola with raisins
1/4 cup sugar
3 Tbsp. almond or coconut milk
1-1/2 tsp. Simply Organic Vanilla Extract
1-1/2 tsp. Simply Organic Ground Cinnamon
3/4 tsp. Simply Organic Ground Nutmeg
Directions
1. In large bowl, combine pumpkin, cinnamon, nutmeg, vanilla, milk and sugar. Stir until well blended.
2. In 12 ramekins or parfait dishes, layer pumpkin mixture alternating with yogurt. Top with granola and serve immediately or refrigerate until you’re ready for a sweet treat!
