Ramen Chicken Soup (kid & grown-up versions)

A lifesaving recipe for me that is super easy, cheap and healthy (in comparison to most fast food meals)is my homade ramen chicken soup. Our household is a family of three, so when I buy a rotisserie chicken, there are always plenty of leftovers.

I use the leftover chicken and add this to my ramen chicken soup. You can have a tasty, healthy and economical meal in about 10-15 mins–now that’s Momonomics!

Ingredients:
1 ramen package(chicken flavor)
Fresh broccoli
Raw baby carrots
Raw spinach
Rotisserie chicken (or meatballs)

Directions:
Boil 3 cups of water
Add chicken
Add seasoning from ramen package (sometimes I add two packets; depends on taste)
Add broccoli and carrots (cook 2-3 mins)
Add noodles (cook around 7 mins)
Add spinach at the very end (right before serving) and mix in with all other ingredients (2 mins)

After I serve the meal to my daughter (she cleans the bowl every time), I add crushed red peppers to give the soup a litle zing and then it’s ready for the adults!
