You’ve heard it a million times. Breakfast is the most important meal of the day. It’s been pounded into your head so many times it’s nearly lost all meaning. With your busy mornings, the mantra often couldn’t matter less. If you’re running late and rushing out the door, you grab whatever’s easy: a bagel, toaster pastry or one of the other unhealthy breakfast staples you really need to stop keeping around. To jump start your health in the early hours, you need to prep ahead. This Raspberry Nut Parfait takes very little active time and can be made up to two days in advance. All you have to do is blend, chill and sprinkle with granola clusters on your way out, and you’ll enjoy a gourmet, on-the-go breakfast.
Raspberry-Peanut Butter Parfaits with KIND Clusters
Serves 2
Ingredients
Peanut Butter “Yogurt”
½ cup boiling water
½ cup peanuts, blanched & unsalted
1/8 tsp. sea salt
1 tsp. vanilla extract
2 Tbsp. maple syrup or agave
2 Tbsp. coconut oil, melted
Raspberry Jam
1/3 cup raspberries, fresh or frozen
Granola Topping
½ cup KIND Raspberry Clusters with Chia Seeds
Directions
- Make the yogurt. In a high-speed blender, blend peanuts and water until smooth. Add remaining ingredients and blend again until smooth. Divide mixture evenly into two small cups and freeze for 1 hour.
- To make jam, mash raspberries with a fork. Pour jam evenly over the two cups of yogurt. Place covered in fridge and chill for 3 hours. (Note: Need to save time? The yogurt and jam can be made and chilled up to 2 days ahead of time.)
- Immediately before serving, sprinkle each parfait with ¼ cup of Kind Clusters.
