Cauliflower is loaded with vitamins and antioxidants, plus it’s easy to swap in for your favorite spuds. Just steam and blend with a handful of raw cashews and herbs, and you’ve got a comfort food you can actually feel comfortable eating!
Raw Cauliflower Cashew Mash
Ingredients
1 cup soaked cashews
1/2 lemon, juiced
1 head of cauliflower
1 Tbsp. rosemary
1 tsp. thyme
freshly ground pepper to taste
Directions
- Steam cauliflower until soft; drain water, reserving about 2 Tbsp. of liquid.
- In blender, combine cooked cauliflower and remaining ingredients.
- Blend until smooth.
