Thin ribbons of zucchini are marinated in a mixture of tangy rice vinegar and lime juice, then seasoned with spicy chili flakes and cooling mint leaves for a zesty, refreshing side dish. It stands well alone as a salad or makes a healthier replacement for the usual mayo-drenched coleslaw.
Raw Chili-Mint Zucchini Salad
Serves 2-4
Ingredients
3 large zucchini, sliced or diced
1 Tbsp. no-salt-added rice vinegar
Juice of 1/2 lime
1 Tbsp. extra virgin olive oil
1-2 tsp. chili powder or chili flakes, to taste
1 Tbsp. mint leaves, chopped
Thinly sliced or diced onions
Freshly ground black pepper, to taste
Directions
Combine all ingredients in a large mixing bowl and marinate for 2 hours before serving. May be eaten at room temperature or cold. Store in refrigerator up to 5 days.
