Red Velvet Protein Blondie Bars

Normally, it’s beans. Beans are the best substitute in brownie and blondie recipes, because they help these gooey desserts retain their quintessential gooeyness. But if you can’t get that concept past a houseful of picky eaters, try tricking them with a different kind of healthy indulgence – one made without beans. Richly flavored peanut butter, especially when mixed with fluffy coconut flour, has the effect on your favorite sweet treats: soft, chewy and seemingly sinful.

Desserts Recipe: Red Velvet Blondies

Red Velvet Protein Blondie Bars

Makes 4 servings
Macros per serving: 281 calories | 17 g protein | 41 g carbs | 10 g fat

Ingredients

2 ripe bananas
¼ cup maple syrup
¼ cup Buff Bake Red Velvet Protein Peanut Spread
½ cup coconut flour
1 scoop PEScience Select Cookies ‘N Cream Protein Powder
1 tsp. beet root powder
Cacao nibs for sprinkling

Directions

  1. Preheat oven to 350 degrees F and line an 8” x 8” pan with parchment paper.
  2. In a large bowl, mash bananas. Add maple syrup and peanut spread, stirring until well combined.
  3. Add remaining ingredients and mix until smooth.
  4. Spoon batter into pan, spreading evenly.
  5. Sprinkle with cacao nibs and bake 25 minutes.
  6. Let cool completely before cutting into 4 even squares and serving.
