Shoestring, curly, waffle, steak—fries come in all shapes and sizes, but what really sets them apart is how they’re cooked. Plain and plunged into boiling oil, you get a crisp finish along with a bunch of unhealthy fat. For a better-for-you potato side dish, try roasting chunky-cut wedges tossed with olive oil and spices. With slight crunch on the outside and a tender-chewy center, these home fries are right at home beside a burger, on your breakfast plate or snacked on solo—ketchup optional!
