Shirataki noodles have been popular with the carb-conscious crowd for years, but have you heard of shirataki rice? Easy to make and low in calories and carbs, this rice made from the konjac plant is also blissfully gluten free. Make a batch of this fruity, sweet and creamy shirataki rice breakfast pudding and you’ll never have a boring breakfast again. The mixture incorporates coconut milk for a swoon-worthy consistency that can be flavored with any fresh berries you’d like. Make a big batch, divide into portions and enjoy it throughout the week. It makes for a great snack or dessert, too!

  1. Prepare rice according to instructions on package.
  2. In mason jar, glass or small bowl, add puréed berries, chia seeds, coconut milk, stevia and 1/2 cup rice; Mix together.
  3. Chill in refrigerator 20 minutes or overnight, garnish with berries and granola, if desired.
