Ingredients

  • 2 cups jackfruit canned in water or brine, shredded
  • 1 avocado mashed
  • 1-2 celery stalks and leaves chopped
  • 1/3 cup green onion chopped
  • 1/3 cup soy-free mayo
  • Juice small lemon
  • 1 tsp ground mustard
  • Freshly ground black pepper to taste
  • 1/3 cup rainbow radishes diced (optional)

Instructions

  1. In large bowl, combine shredded jackfruit, mayo, avocado, lemon juice, celery, green onions, radishes (if you choose), pepper and ground mustard. Mix together well.
  2. Serve as sandwich or lettuce wrap, in scooped out avocado or tomato, or on salad.
