“Skinny” taco night

Fancying fajitas? Craving quesadillas? Unfortunately, if you’re watching your weight, it’s hard to “do” Mexican food without undoing your diet efforts. That’s why we love this healthy, flavorful vegetarian taco recipe from Natural Standard. It’s is surprisingly low in calories–yet filling, delicious and perfect for those nights when you want something crispy, salty and a little bit spicy.

Ingredients

  • Diced tomatoes
  • 1/3 cup  onions, diced
  • 1/2  garlic  clove, minced
  • 2 teaspoons  cilantro
  • 1/3 teaspoon  jalapeño peppers, chopped
  • 1/2 teaspoon  lime juice
  • Pinch of  cumin
  • Nonstick cooking spray
  • 1 ripe  avocado, peeled, seeded, and sliced
  • 1 medium  onion, julienned
  • 2 large  green peppers, julienned
  • 2 large  red peppers, julienned
  • 1 cup fresh  cilantro, finely chopped
  • 12  flour tortillas
  • Optional: 1 can of organic  black beans  and a sprinkle of cheddar cheese

Directions:

Make the salsa first by combining tomatoes, onion, garlic, cumin, cilantro, jalapeno, lime juice and cumin. Chill in the refrigerator for at least one hour.

Prepare your skillet with cooking spray. Lightly sauté the onions and green and red peppers. Optional: add in black beans.

Finally, heat the the tortillas in an oven. Once they are warm, fill with the peppers, onions, avocado slices, and salsa. Top with a pinch of cheddar cheese, if desired.

Without the optional add-ins, this meal only has 270 calories, 8 grams of fat, plus a whopping 5 grams of fiber and 7 filling grams of protein.
