All you need is a food processor to make this simple one-step recipe. Combine pure pumpkin puree, tahini, cinnamon and classic hummus spices for a creamy spread you’ll definitely want to share at your next fall gathering. Serve this seasonal fan-favorite with beet chips, sweet potato chips and sliced veggies.
Ingredients
15.5-oz. can chickpeas
1/2 cup + 1 Tbsp. pumpkin puree
3 garlic cloves
1 Tbsp. Vitacost Organic Tahini
1 Tbp. water, or as needed
Juice from 1 lemon
2 Tbsp. Vitacost Organic Extra Virgin Olive Oil
1/2 tsp. ground cumin
1/2 tsp. smoked paprika
1/4 tsp. ground cinnamon
1/4 tsp. chipotle powder
1/2 tsp. salt, or to taste
Toppings
Extra virgin olive oil
Pumpkin seeds
Smoked paprika
Tortilla chips
Parsley or cilantro
Directions
- In food processor, pulse ingredients until smooth. Scrape down sides as required. Adjust seasonings to taste. (Note: If hummus is too thick, add more water.)
- Spoon into serving bowl and drizzle with extra virgin olive oil. Garnish with pumpkin seeds, smoked paprika and chopped parsley or cilantro.
