Quinoa Oatmeal with Goji Berries

Spiced Quinoa-Oat Porridge with Goji Berries

Ingredients

4 cups of water
½ cup Ancient Harvest Quinoa Hot Cereal Flakes
½ cup Bob’s Red Mill Steel Cut Oats
½ cup Essential Living Foods Enlighten Mix, separated
¼ cup Eden Dried Cranberries
½ cup Navitas Naturals Sun-Dried Goji Berries
½ tsp. cardamom
½ tsp. cinnamon
½ tsp. salt
1 tsp. chopped walnuts, to serve
½ cup milk, to serve (optional)


Directions

  1. In a medium saucepan, combine all ingredients from water to salt, using only half of the Essential Living Foods Enlighten Mix, and stir. Bring to a boil, reduce heat to simmer and cook for 20-25 minutes, stirring occasionally.
  2. Serve with the rest of the Enlighten Mix, walnuts and milk, if desired.
