Spicy Chipotle Cashew “Cheeze”

Some like it hot””others prefer it dairy free. We’re talkin’ dip here! And this recipe gives you the best of both worlds: “cheesy” texture and flavor concocted from cashews and nutritional yeast, plus a hint of heat from chipotle pepper powder. Try it with veggies, blue corn chips, gluten-free crackers or anything that tastes even better dunked, or use it as a spread or filling (check back next week for a Spicy Stuffed Peppers recipe that puts it to good use!).

Don’t let the creamy look fool you. There’s no cheese in this dip! The secret? Soaked, raw cashews.

Spicy Chipotle Cashew “Cheeze”

Serves 2

Ingredients

1 cup cashews
¼ cup water (or more, to create desired consistency)
3 Tbsp. cilantro
½ tsp. chipotle powder (or more, to taste)
Juice of ½ lemon
1 Tbsp. fresh parsley
¼ cup nutritional yeast
1-2 cloves garlic
¼ cup green onion, chopped

Directions

1. In a jar or container of your choice, cover cashews with water. Let soak for one hour, refrigerated. Drain and rinse.

2. Add cashews and remaining ingredients to a high-speed blender and blend to desired consistency (chunky or smooth).

3. Serve as a dip, spread or use in recipes as a filling. Cheeze may be stores in an airtight container for up to a week.
